Is there any way i can just setup one default mail client for people to use? sure its nice to have the availablitiy of the others but it creates alot of clutter and its one more step that doesnt need to be there  huh

Not through cPanel at the moment. You can however find a mail script that you like install it and give that out to people instead of giving them the cPanel mail link.
